Les briochés et viennois
Brioche is a risen dough, quite light and airy, containing a high amount of butter and eggs. It is the base for our white chocolate and vanilla mushroom. Le viennois on the other hand is characterized by its supple and glossy crust. With small amounts of the same ingredients that are typically found in ‘viennoiseries’ from which it derives its name. You will find it in sweets such as le buns viennois raisins orange & muscade, or in breads such as la navette betterave viennoise.
